Air Fryer Crispy Tofu (Print Version)

# Ingredients:

01 - 16 ounces of extra-firm tofu, one block.
02 - Two teaspoons of soy sauce, low-sodium.
03 - One and a half teaspoons of vinegar made from rice.
04 - 1 1/2 teaspoons of toasted sesame oil.
05 - A teaspoon of hot Sriracha sauce.
06 - One large garlic clove, finely grated.
07 - Fresh ginger, grated, one teaspoon.
08 - Two teaspoons of granulated sugar.
09 - A pinch of ground black pepper, 1/4 teaspoon.
10 - Four tablespoons of cornstarch.
11 - Cooking spray or oil mist.
12 - Salt to your liking.
13 - Add scallions and sesame seeds for topping.

# Instructions:

01 - Wrap tofu with kitchen towels. Place a heavy object on it in a pan for 15 minutes to drain water.
02 - Combine soy sauce, sesame oil, vinegar, garlic, ginger, sugar, Sriracha, and pepper in a dish.
03 - Cut your tofu into cubes (32 pieces). Soak the cubes in the sauce mix for about 15 minutes.
04 - Take marinated tofu and coat lightly with cornstarch. Ensure an even layer on each cube.
05 - Warm up the air fryer to 400°F. Spray a thin layer of cooking oil in the basket.
06 - Spread coated cubes in one layer. Spray lightly, cook for 5 minutes, turn them, spray again, then cook 5 more minutes until nicely browned.
07 - Add salt if you like. Dress with sesame seeds and scallions. Serve warm with a dip if you want.

# Notes:

01 - Want a dip? Double the sauce ingredients and save half before soaking the tofu.
02 - Leftovers keep fresh up to 4 days if sealed well in the fridge.
