# Ingredients:

01 - 300g mascarpone
02 - 4 tablespoons powdered sugar
03 - 130ml chilled espresso
04 - 400g ladyfinger biscuits
05 - Cocoa powder to dust

# Instructions:

01 - Break up the ladyfingers in a big bowl using your hands or blitz them in a food processor.
02 - Toss the mascarpone, powdered sugar, and chilled espresso into the bowl.
03 - Stir everything together until it forms a sticky, doughy mix.
04 - Roll the dough into small balls with your hands.
05 - Coat each ball all over by rolling it in cocoa powder.
06 - Pop the balls in the fridge for 15–30 minutes to firm up before serving.
